Habtamu Fekadu Aga manages several washing stations throughout Ethiopia, though on a relatively small scale operation compared to the size of many cooperative run washing stations, allowing for a focus on quality and traceability with village-specific separations. This lot comes from outgrowers around the Goro washing station in Guji.

For this lot, cherries are pulped, leaving about 10% mucilage around the seeds, which undergoes a 24 hour fermentation and is then washed and dried. To ensure even moisture content, the coffee is continually turned with data on moisture being logged.

The resulting coffee is uniform, vibrant, and very expressive. The cup is bursting with flavors of peach, nectarine, and watermelon, couple with more tropical fruits like guava and mango. It is also intensely floral, ranging from bergamot to orange blossom and honeysuckle.

Price Breakdown:

Our Total Cost: $tbd
Packaging, labor, and weight loss: tbd
Green Price: $7.45/lb
FOB Price: $5.90/lb
Farm Gate Price: coming soon
Importer: Falcon

*We roast on Tuesdays and ship the following day; order deadline is 7:00 am Tuesday morning; local pick-up orders will be ready on Fridays after roasting

//cdn.shopify.com/s/files/1/0706/4040/2712/files/website-boxcopy-Recovered-Recovered_6f4b6a38-3973-4f8e-ac0c-6bf16d87983d.jpg?v=1787417137
kenya-malaki
Kenya | Malaki AB

Region: Kiambu, Kenya
Process: Washed
Variety: SL28, SL34
Altitude: 1900 masl
We Taste: Mango, Hibiscus, Pink Peppercorn

Malaki Estate is a family owned farm, managed by mother and daughter team, Florence and Jessica Marigi. The farm was originally planted in 1959 by Florence's husband, Edward Marigi, and throughout the years, they have not introduced newer, hybrid varieties, such as Ruiru 11 and Batian. Instead, their farm is comprised solely of SL28 and SL34 trees which are highly regarded for their quality potential and the classic and beloved Kenyan coffee flavor profile. That being said, recent testing has started to challenge what we understand about varieties and plant genetics in Kenya, but either way, this coffee carries hallmark Kenyan flavors. In the cup we find flavors of mango, blood orange, and pink peppercorn, alongside a tart red acidity that reminds us of hibiscus, raspberry, and rhubarb. There is also a subtle floral quality that reminds us of magnolia blossom and white tea.

We're also excited to share this coffee as it is the first single farm Kenyan coffee we've had on our menu. Typically, the lots we purchase from Kenya are comprised of cherries collected from many smallholder farmers, that are then processed at a centralized washing station. Coffees from many larger estates in don't tend to have the rigorous picking, sorting, and processing protocols that the quality-focused washing stations have. However, in recent years, we have seen more single producer and estate coffees that are exceptional. While each type of production and producer is important to support, we hope to see a continuing focus on quality with Kenyan estates, as it's evident the ceiling can be very high.

Price Breakdown:

Our Total Cost: coming soon
Packaging, labor, and weight loss: coming soon
Green Price: $6.75/lb
FOB Price: coming soon

Farm Gate Price: coming soon

Importer: Red Fox

*We roast on Tuesdays and ship the following day; order deadline is 7:00 am Tuesday morning; local pick-up orders will be ready on Fridays after roasting

//cdn.shopify.com/s/files/1/0706/4040/2712/files/website-boxcopy-Recovered-Recovered_dd7f971d-f6a8-4ade-af2f-79337a854dce.jpg?v=1788291353
guatemala-america-alejandro
Guatemala | America & Alejandro

Region: Canoguitas, Huehuetenango, Guatemala
Process: Washed
Variety: Caturra, Bourbon, Catimor
Altitude: 1,500- 1,900 masl
We Taste: Apple Butter, Vanilla, Praline

America Perez Ramirez and her father Alejandro Ramírez Méndez farm across four parcels in Huehuetenango, at elevations ranging from 1,500 to 1,900 masl. They grow caturra, bourbon and catimor varieties under chalum and grevillea shade trees, and they grow corn and beans for household use on the land as well.
