In the cup, we're finding delicate notes of blueberry, orange creamsicle, white peach, and sweet lavender florals.\u003c\/p\u003e\n\u003cp\u003eHe is a member of the Tokuma group in Agaro, Ethiopia, which is a group of smallholder farmers who are pushing the boundaries of coffee production in Ethiopia in terms of traceability and producer autonomy. In the context of the history of Ethiopian coffee, which has largely been sold through the Ethiopian Commodity Exchange, the idea of seeing single-farmer lots is still a relatively new concept. Individually held export licenses have provided greater agency for producers to market and sell their own coffee, while improving the traceability of Ethiopian coffee. However, it is still common practice for these producers to buy cherries from their neighbors, process it, and sell it in order to have more consequential volumes of production to export. The Tokuma producers differ in that their lots are comprised solely of coffee that they grow. This model creates lots of the utmost traceability, while allowing the Tokuma producers to keep their cost of production low.This gives them a unique opportunity to keep their pricing very competitive, while maintaining high profit margins. This degree of control over their own production is rare and cutting edge for Ethiopia, and we believe strongly that their work together with Osito is a model for progressive and sustainable purchasing in Ethiopia\u003c\/p\u003e\n\u003cp\u003eThis year, we purchased 1.5x the volume we previously purchased from Mohammed as we strive to dig deeper into our existing relationships and create more purpose-driven and sustainable partnerships with the producers who most align with our vision for the future of coffee. All of this has contributed to higher quality and shelf life for the coffees, which in turn leads to higher prices for the producers, allowing them to reinvest into their own production. Red Fox, who imports the coffees, commits to buying as much coffee as they can from Valle Inca with preset, tiered FOB prices based on cup score ranges, creating more structured financial reliability predictability for the producers. Daniel's Typica is a stellar example of the quality coming from Valle Inca with flavors that remind us of fresh blueberries, plums, and a floral quality that is reminiscent of lavender, honey, and white tea. Each contributing lot is evaluated many times to ensure that it meets both a strict set of physical standards (including moisture content and water activity parameters) and cup quality standards. Creating these larger community lots like Juanambu is a great way to create market access for smallholder farmers whose production may be too small for it to make logistical sense to separate out as a single producer lot, but who are producing coffees of great quality nonetheless. Through purchasing various tiers of quality levels all with lowered risk of price volatility, our partners at The Coffee Quest are able to provide the confidence for these producers to make adjustments to their production and processing to help improve their coffees over time. This coffee is an excellent example of how collaborative effort can create a more sustainable supply chain by providing economic support to groups of producers as well as creating an excellent coffee! We have carried his coffees in the cafe from various roasters since we opened, and Bow had the opportunity to first roast his coffee in 2019 during his time at Hex. Luis’s coffee was also the first coffee we served in the cafe that was roasted under our own name. Needless to say, his coffees are deeply intertwined into our journey in coffee and we’re thankful to offer this lot from him this year. This particular lot is an approachable coffee that we could drink day in and day out. It has a soft, pleasant acidity that reminds us of golden raisins and clementine and a sweetness that reminds us of maple syrup, nougat, and milk chocolate. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eOver the years, Osito has dug deep into their relationship with Luis, buying more of his coffee every year, and as of this year purchased large volumes from three of Luis’s sons as well. They're not always in your face with super intense or concentrated flavors, but if you pay close attention, they have so much to offer. This community lot from the Junin region is a perfect example. It's flavors shift and change as you drink it, but we always find a range of jammy red and purple fruits with a deep brown sugary base. We work to source lots like San Juan Pueblo Libre that are built with intention, have transparent records, and give shared market access to smallholders through their combined efforts. The Kamwangi factory was among the top 5 highest paying factories for cherry this year, making them highly competitive for quality and resulting in high volumes of output, as nearby farmers whose coffee met their qualifications were eager to work with them. Another contributing factor to the high quality this year was the introduction of solar dryers to help provide a more predictable and stable drying environment for processing, ensuring that coffee is dried slowly and evenly. In recent years, excessive rain and sun (largely due to climate change) have both been culprits of negatively impacting quality in Kenya. However, the solar dryers have already proved themselves to be an effective tool against unpredictable weather, and the results speak for themselves (and will continue to as we can expect these coffees to hold their quality against fading). We've been enjoying the vibrant acidity and juicy sweetness of Kamwangi. The total organization is small with just 30 members, all of whom belong to the Mam Mayam indigenous community, with Mam still being the predominantly spoken language. The Association owns a communal wet mill where most of these producers process their coffees and has a shared lab where they make their own organic fertilizers. The members used to bulk their parchment together and sell locally to co-ops that paid the market rate, but due to distance, long turnaround times for payment, and very low prices, the members began searching for other ways to sell their coffee. Through Shared Source, these producers have greater market access to buyers willing to pay higher prices for their coffees with immediate payment upon delivery. The fermentations for the coffees are long (between 2-3 days) and the tanks are covered with thick tarps, but stay cool in temperature. This lends towards the complex, fruit forward flavors of the coffees, while maintaining control of the fermentation so that the coffees are still exceptionally clean in the cup. After years of migrating north for seasonal agricultural work, these producers invested their savings to renovate old coffee farms and planted the rust resistant variety Costa Rica 95, hoping that they'd be able to improve their quality of life and create a sustainable income. After acquiring equipment and receiving training on processing through the Rural Development Secretariat in 2020, the group participated in the Pride of Puebla competition for the first time in 2021. In 2022, their coffees scored among the 30 best in the competition and by 2023 their coffees occupied 6 out of the 10 top lots in the competition. \u003c\/p\u003e\n\u003cp\u003eThis group of young producers are a testament to the potential for young producers to achieve success in the industry and we're proud to be working with their coffee. They also host open weekly cuppings to improve producers' ability to evaluate and understand their coffees while they receive feedback from other members. These open dialogues about pricing, quality, and the market are helping to create a more robust community of smallholder farmers in San Augustin, and is rooted in the importance of collaboration. \u003c\/p\u003e\n\u003cp\u003eThough Jaime has been producing high quality coffee for many years, it wasn't until working with Monkaaba that Jaime was able to sell his coffee under his own name, rather than having it blended into larger regional lots. Mejorado has close genetic ties to Ethiopian landrace varieties, and is almost exclusively grown in Ecuador. Mejorado's typical flavor profile comes as no surprise, with a range of floral and citrus flavors similar to that of Ethiopian coffees. This lot from Nueva Esperanza is no exception and reminds us of of coffees from the Agaro region in western Ethiopia. It's delicate with soft florals and flavors of pear, melon, honeycomb, and oolong tea. It's soft and delicate with floral honey and tea-like aromatics, plus a lively citrus acidity that reminds us of tropical fruits like mango, papaya, and honeydew melon. This is one of her first harvests of Gesha from seeds she planted back in 2020. It takes several years for trees to begin producing cherries at all, and from there it can take a while for producers to optimize their growing practices and processing for new varieties. It was processed at the Muzo washing station, owned by Emmanuel Busatira of Baho Coffee and was brought to us through Ben Bowdowin of Sundog Trading. The Muzo station is the smallest owned by Baho and getting cherry to the station for many smallholders in this region is particularly strenuous due to the extreme elevation and mountainous terrain. Baho assists these producers by providing a free collection service at producer's homes. The Janja Hill lot goes through rigorous sorting protocol to remove defects and ensure uniformity with multiple rounds of floating cherries and removing floaters, density sorting, and a final soak to make for a more homogenous drying process. All of this work is evident in the cup quality, with Janja Hill having a lot of complexity plus focus of flavor. \u003cmeta charset=\"utf-8\"\u003e \u003c\/p\u003e\n\u003cp\u003eCoffee production in Rwanda is largely built on the model of having centralized washing stations where smallholders deliver their cherries for processing. These stations can receive cherries from hundreds or thousands of farmers, however, Baho is building small lots with several neighboring producers' cherries grouped together. Though building smaller lots like this is more rigorous than creating larger regional lots, it allows us the privilege to taste the profiles of more micro-scale regions within Rwanda with a greater degree of transparency into who is growing the coffee we get to taste. Emmanuel's attention to lot separation is a major commitment towards quality and is cutting edge for coffee in Rwanda. This coffee is very complex with a deep honey-like sweetness, aromatics baking spices and rooibos tea, and a vibrant acidity that reminds us of hibiscus, red currants, and blood orange.\u003c\/p\u003e\n\u003cp\u003eCoffee production in Rwanda is largely built on the model of having centralized washing stations where smallholders deliver their cherries for processing. These stations can receive cherries from hundreds or thousands of farmers, however, Baho is building small lots with several neighboring producers' cherries grouped together. Though building smaller lots like this is more rigorous than creating larger regional lots, it allows us the privilege to taste the profiles of more micro-scale regions within Rwanda with a greater degree of transparency into who is growing the coffee we get to taste. By 18, he was tending to 1,000 trees of Caturra of his own. In the 90s, Jose would often sell his cherry \"en verde\", which meant that the cherries were depulped and immediately sold in the local market. Though this method of sale fetches incredibly low prices, it was somewhat more viable in the past, because the overall cost of growing coffee used to be much lower. However, growing coffee today is much more challenging. The costs of production couple with inflation have made it far more expensive while difficult-to-control diseases such as roya make it far more risky. Despite the fact that selling coffee \"en verde\" no longer being a sustainable option, many smallholder producers in San Augustin still operate this way because they lack the resources to navigate the supply chain and sell their coffee in better markets. Though Jose was fortunate to find a better market for his coffee through the Los Naranjos group in the 2000's, his coffee was being blended into very large regional lots with very little traceability and the prices he received were only marginally better than those of the local markets. This left him disheartened and disconnected from his customers and his coffee. However, Jose has now joined the Monkaaba group who are working toward solving these issues for producers in their community. \u003c\/p\u003e\n\u003cp\u003eMonkaaba is an initiative rooted in collaboration that is aimed at assisting smallholder producers in finding better market access and better prices for their coffees, and invests in them to ensure their future success.  The leaders of the Monkaaba group are educating producers on how the supply chain works so that they can better navigate it, while helping them to improve growing, harvesting, and processing techniques. They also host open weekly cuppings to improve producers' ability to evaluate and understand their coffees while they receive feedback from other members. These open dialogues about pricing, quality, and the market are helping to create a more robust community of smallholder farmers in San Augustin.\u003c\/p\u003e\n\u003cp\u003eBecause of this work, Jose now has stronger and more direct relationships with roasters, providing him with not only higher prices but with buyers intent on durable, long-term relationships.  We are excited at the prospect of being one of those roasters and hope to purchase his coffee for years to come. The clouded forest there creates a cool microclimate with temperatures ranging from 50-60 degrees Fahrenheit. Because of the cooler temps, the drying process is even and slow with natural-processed coffees taking 25-30 days to dry on raised beds. The cherries are also floated prior to drying, which allows for an additional level of sorting and removal of defects. The attention to detail in the processing leads to incredibly clean naturals with focused, expressive, and vibrant flavors that showcase highlights of both the processing and the variety. In this SL34 lot, we find that the winey and berry-like flavors of the SL variety are present and clear, and are complemented by tropical flavors and florals that are likely augmented by the skillful processing.\u003c\/p\u003e\n\u003cp\u003eLast year, we purchased the natural red catuai from Luis, and have long hoped to have an opportunity to purchase and roast the SL34 he grows as it has been one of our favorite coffees we drink every year. Currently Jesus acts as an on the ground support-network for the producers that Semilla purchases from, and he connected Celia with Semilla. \u003c\/p\u003e\n\u003cp\u003eCelia's coffee was our favorite among the samples we tasted from Semilla last year. For this lot, cherries are harvested at peak ripeness and stored in sealed plastic bags in the shade for 35 hours. They were then depulped and underwent a secondary fermentation in sealed bags for an additional 35 hours. Afterwards, the remaining mucilage is washed off and the coffee is dried on raised beds to 10.5% moisture content. In the cup, we predominantly taste fruit flavors of plum and grape, with some subtle tropical flavors like starfruit, backed by a deep chocolatey and brown sugary base. \u003c\/p\u003e\n\u003cp\u003eThis year, Semilla purchased Celia's entire production intended both for microlots and to be included in a regional blend. This approach is often times much easier said than done, as the production of new varieties takes time, learning, and trial and error. In this case, it took four years and combining the production from their four harvests to have enough volume to create a substantial sized lot for exporting. However, it's evident that their hard work is already paying off because even in this first year, the quality is exceptional. \u003c\/p\u003e\n\u003cp\u003eSL28 is highly revered for its quality and it's flavor profile is largely associated with that of Kenyan coffee, as that is where it was developed and first grown. Though it's not always the case with every SL28 grown and processed in other countries, the hallmark characteristics of the variety definitely shine through in this lot. Carmen Montoya won the 2014 Cup of Excellence with a Chiroso, which kickstarted its current recognition. It is known to be an Ethiopian landrace with flavor characteristics often showcasing ripe citrus, tropical fruit, and florals. Though Chiroso has not had the same sort of explosion into the specialty coffee scene as Pink Bourbon grown in Huila, we expect to see more of it in years to come. Because of Hamasho's high elevations, sunny days and cool nights, and humidity, the cherries ripen slowly and are very small and dense. We find this type of morphology to often lead to very complex cups that are a real treat to roast! The farm grows the Bourbon variety surrounded by natural fruit trees for shade. The coffee is pulped immediately after harvest and fermented for about 24 hours in wooden tanks, before being dried on patios. Romeo also makes his own organic compost from the spent coffee pulp to feed his farm. Because of the extreme elevation, Romeo and his family have to carry their coffee 30 minutes down to the nearest part of the dirt road for it to be transported by truck to the nearest collection center. Between his extra efforts toward regenerative agriculture and the remote nature of his farm, producing coffee from La Joya is not simple and is a labor of love. Wicho is a testament to the potential of success for regenerative agriculture in specialty coffee. It's even more impressive that he's doing so at scale with a farm now spanning over 70 hectares. \u003cmeta charset=\"utf-8\"\u003eWicho uses coffee pulp and worm-cultured soil as fertilizer and consistently sends samples of soil and foilage to labs to better understand the health of his trees. Coffee production in general is highly reliant on expensive chemical fertilizers, fungicides, pesticides, etc and we believe that pursuing organic or regenerative practices is a great way for producers to boost the health of their farms and have more autonomy over their production. While doing so can be incredibly complicated and risky beyond what we can understand ourselves or try to explain, Wicho and his farm gives hope that others may be able to adopt similar practices with success. Last year, the coffee we purchased from Santa Isabel made up our largest lot by volume. We increased our volume even more this year to be able to add his coffee as a single origin offering as well as holding spots in our year round offerings. Last year, the Kamwangi factory also introduced solar dryers which helps create a more predictable and stable drying environment, ensuring that coffees are dried slowly and evenly. In recent years, excessive rain and sun (largely due to climate change) have both been culprits of negatively impacting quality in Kenya. However, the solar dryers have already proved themselves to be an effective tool against unpredictable weather, and the results speak for themselves (and will continue to as we expect these coffees to hold their quality against fading). We've been enjoying the vibrant acidity and juicy sweetness of Kamwangi. Mejorado has close genetic ties to Ethiopian landrace varieties, and is almost exclusively grown in Ecuador. Mejorado's flavor profile comes as no surprise, with a range of floral and citrus flavors similar to that of Ethiopian coffees. This year's harvest is zippy and electric.
