We're excited to have two Gargari Gutity lots on our menu this year, one washed, and one natural. Having both provides a fun opportunity to taste the way in which the process impacts the flavor of these two, otherwise similar, lots from the same region.  While both coffees are packed with sweet fruit and florals, they're markedly different from one another. The careful production and lot separation for these coffees was managed by Abreham Mengiste and Messier Workneh of Primrose Coffee. Both of these coffees jumped off the cupping table when we first tasted them and we've been waiting eagerly to share them with you ever since!

The washed lot from the Gargari Gutity is comprised almost entirely of the 74110 variety from smallholder farmers who live nearby the processing station. The cherries for this lot are depulped and undergo an initial 12 hour fermentation. The coffee is then washed in water and undergoes a secondary fermentation for 48-72 hours. We find the processing on this lot contributes to a very vibrant profile with flavors of white peach, nectarine, candied ginger and florals such as honeysuckle and bergamot.

The natural lot is comprised of a single variety, called Kurume. It is dried in cherry on raised beds for 19-25 days with regular rotation to promote uniform drying. To us, this process creates a very tropical and ripe profile with flavors of strawberry, papaya, and pineapple, and floral qualities reminiscent of elderflower and lavender.
