German Ortiz is a founding member and treasurer of the producer group, Los Guácharos in Bruselas, Colombia. This is a group of quality-focused producers moving toward organic farming, which is both a highly rewarding but oftentimes incredibly challenging process for smallholder coffee farmers. They make their own fertilizers and fungicides, including “Super Magro,” a compost tea made from minerals, manure, and local microbes to boost soil health and reduce chemical use.

German grows pink bourbon, castillo, caturra, variedad colombia, and bourbon ají, but this particular lot contains both pink bourbon and ombligon. We've had very few ombligons and the exact genetics are somewhat ambiguous. Some believe it has close genetic ties to an Ethiopian landrace, similar to Chiroso or Pink Bourbon, but others believe it may be a natural mutation of a variety like caturra, castillo, pacamara, or bourbon. Whenever we have seen ombligons from other roasters, they have generally been processed in a way that will be a bit more loud, intense, and funky, so we jumped at the opportunity when we tasted this washed lot. Although this lot does see some extended fermentation: 24 hours in cherry and then 36-48 hours depuplped in sealed containers, it is very clean. The cup is jammy, but still has nice acidity, reminding us of raspberry jam, pomegranate, plum, and nectarine, with a subtle rose and honey-like floral quality.
