This is our first Ethiopian release from the most recent harvest and the quality of the coffees this year is really exciting. Habtamu Fekadu Aga manages several washing stations throughout Ethiopia, though on a relatively small scale operation compared to the size of many cooperative run washing stations, allowing for a focus on quality and traceability with village-specific separations. This lot comes from outgrowers around the Goro washing station in Guji.
For this lot, cherries are pulped, leaving about 10% mucilage around the seeds, which undergoes a 24 hour fermentation and is then washed and dried. To ensure even moisture content, the coffee is continually turned with data on moisture being logged.
The resulting coffee is uniform, vibrant, and very expressive. The cup is bursting with flavors of peach, nectarine, and watermelon, couple with more tropical fruits like guava and mango. It is also intensely floral, ranging from bergamot to orange blossom and honeysuckle.
