It's that time of year for fresh Ethiopian coffees and we're excited to have Tima as our first release from the recent harvest. This is the second year purchasing Tima from Ture Waji, founder of Sookoo Coffee. Though Ture has a long history of producing excellent naturals (many of which we've enjoyed over the years), this is only his second year producing washed coffees. We were excited by the opportunity to purchase some of the first washed coffee last year and are pleased to have it back on the menu. This lot is is comprised of cherries from smallholder farmers around the Tima sub-kebele and is processed at the Weesi station. Here, the cherries are depulped with a Penagos eco-pulper, followed by a 12 hour underwater fermentation, and are then dried on raised beds. 

This coffee is delicate and floral with flavors of apricot, white melon, guava, and orange blossom. We find that most of our coffees taste best rested a couple weeks off roast, but with Tima in particular, the flavors really open up with extra time.
