This community lot comes from five producers who are members of the ASDEFLOR Association in Chanjón. The total organization is small with just 30 members, all of whom belong to the Mam Mayam indigenous community, with Mam still being the predominantly spoken language. The Association owns a communal wet mill where most of these producers process their coffees and has a shared lab where they make their own organic fertilizers. The members used to bulk their parchment together and sell locally to co-ops that paid the market rate, but due to distance, long turnaround times for payment, and very low prices, the members began searching for other ways to sell their coffee. Through Shared Source, these producers have greater market access to buyers willing to pay higher prices for their coffees with immediate payment upon delivery. The fermentations for the coffees are long (between 2-3 days) and the tanks are covered with thick tarps, but stay cool in temperature. This lends towards the complex, fruit forward flavors of the coffees, while maintaining control of the fermentation so that the coffees are still exceptionally clean in the cup. We love the depth of sweetness in this coffee and find that it reminds us of strawberry candy, plums, dates, and milk chocolate.
