This is our second year purchasing from Finca Santa Isabel, owned by Wicho Valdés in Cobán, Guatemala. Wicho is a testament to the potential of success for regenerative agriculture in specialty coffee. It's even more impressive that he's doing so at scale with a farm now spanning over 70 hectares. Wicho uses coffee pulp and worm-cultured soil as fertilizer and consistently sends samples of soil and foilage to labs to better understand the health of his trees. Coffee production in general is highly reliant on expensive chemical fertilizers, fungicides, pesticides, etc and we believe that pursuing organic or regenerative practices is a great way for producers to boost the health of their farms and have more autonomy over their production. While doing so can be incredibly complicated and risky beyond what we can understand ourselves or try to explain, Wicho and his farm gives hope that others may be able to adopt similar practices with success. Last year, the coffee we purchased from Santa Isabel made up our largest lot by volume. We increased our volume even more this year to be able to add his coffee as a single origin offering as well as holding spots in our year round offerings. We look forward to sharing his coffee for years to come. 

This year, we're finding dark winey fruits like plum and blackberry in the cup alongside flavors of marzipan and milk chocolate.
