This coffee was produced by Luis Alberto on his farm, Regalo De Dios, in the Dipilto-Jalapa mountain range in Nicaragua. The clouded forest there creates a cool microclimate with temperatures ranging from 50-60 degrees Fahrenheit. Because of the cooler temps, the drying process is even and slow with natural-processed coffees taking 25-30 days to dry on raised beds. The attention to detail in the processing is evident in the cup, with clean, jammy red and purple fruits shining in the forefront and a rich chocolatey base.
On the farm, he grows several varieties, including red and yellow Catuai, Pacamara, Maracaturra, Java, Bourbon, SL34, Catimor, and some hybrids. In fact, his naturally processed SL34 roasted by Little Wolf was one of the most memorable coffees we've served in the cafe, and was how we came to be familiar with Luis's coffees.
